Madras

Himachal Pradesh has some amazing food options. One of the staples here is madras, a creamy curry. The main ingredients are chickpea flour, aromatic spices, and yogurt. The chickpea flour is first roasted and then mixed with the yogurt to form a paste. This is then heated until it forms a creamy consistency, when the spices are mixed in. Madras can feature vegetables, paneer (Indian cottage cheese), chicken, or lotus stems. Served with naan or rice, it’s a dish you can’t miss.
